Our Origins Cerebral Brewing was brought to life in 2015 by co-founders Sean Buchan and Dan McGuire in Denver’s Congress Park neighborhood along the city’s famed Colfax Avenue. Since the beginning, Cerebral has focused on quality, innovation, and evolution in all endeavors, from the beer we brew to the culture we create. We’re here to serve our community through our craft - raising funds and awareness for local causes we care about. Our Craft Cerebral Brewing fans have come to expect expertly crafted beers in a wide range of styles using a multitude of unique techniques. We embrace “a scientific approach to beer” by employing precise methodology to ensure quality and consistency. We’re proud to say we’ve had an in-house QA/QC lab since day one, and our commitment to quality has never wavered. Beyond the metrics and measurements, we lean on artistic inspiration and creativity to continuously develop new recipes. We are passionate about foeder fermented lagers, imaginative IPAs, and our extensive barrel-aging program. Our Future Since 2022, we’ve been brewing at our 18,000 sq. ft. facility in the heart of the Aurora Cultural Arts District, and our Aurora Arts taproom has been welcoming friends and neighbors since 2024. Now, we’re excited to continue the next chapter of Cerebral Brewing with the recent opening of our West Highland taproom in collaboration with our friends at Outside Pizza - bringing great beer, food, and community together in a whole new neighborhood. It’s been incredible to see how far we’ve come over the last few years, and we can’t wait to see where we go next. We’re thrilled to have you along for the ride as we keep growing, experimenting, and sharing what we love with our community.
